Pumpkin Pancakes

1 IP Crispy Cereal
1IP Vanilla Pudding
2 t. baking powder
1 t. pumpkin pie spice (or to taste)
4 to 5 T. water (enough for desired consistency)
2 egg whites (one egg white for each serving
In a magic bullet or blender, add crispy cereal, pudding and baking powder, and spices and blend. Divide in half (this is two servings) and save other half for another day.  To half of the mixture add one egg white and enough water for pancake consistency (around 4 to 5 T.)  Spray non stick pan with Pam and cook over a medium low heat. This will make two good sized pancakes. Serve with Walden Farms Pancake syrup and sprinkle with more pumpkin pie spice if desired.

Alternatives: Use banana pudding or blueberry pudding and take out the pumpkin pie spice. You could use Walden Farms blueberry pancake syrup for the blueberry pancakes!

6. Bake 10 minutes; take out of oven and flip. Bake another 5 minutes.

*Pumpkin pie extract or emulsion may be subbed for ½ tsp. of the water for a more intense pumpkin flavor. Take the water down to 1 T. + 1 tsp. if subbing. Omit pumpkin pie spice entirely.

TIP: Always try to spread the cookies out evenly, so that they bake evenly. Spread them out a little bit smaller than the size of your palm, a standard cookie size will do. Watch the cookies towards the end or they will burn up quickly.

Pumpkin Pie Iced Latte

This tasted like I just drank a rich piece of pumpkin pie! I still use the IP premade vanilla drink when looking for something to satisfy a sweet tooth. Made this for an after dinner dessert drink using 2 shots of decaf espresso, 1 IP premade vanilla drink and 1/2 tsp. pumpkin pie emulsion. Incredible. The emulsion was key in making it taste rich

Pumpkin Pie Crispy Square

If you're looking to get in on a pumpkin pie spiced dessert with an easy fix, try sprinkling the IP crispy square with pumpkin pie spice and heat in the microwave until a little melted, about 15-20 seconds (frosting side up so it melts down into the bar)... and because I can't leave anything alone I dusted the plate with pumpkin pie spice and sprinkled the pumpkin shape by making a template with paper for presentation. You may also use regular cinnamon.
